The Ghent Genesis
Koffiana was founded in Ghent—a city historically defined by guild craftsmanship, Flemish textile engineering, and a restless contemporary specialty koffee culture. As home baristas and mechanical purists, we grew frustrated with the fragmentation of the European equipment landscape: high-ticket machines shipped without local calibration, automated plastic appliances with programmed obsolescence, and zero technical guidance on water chemistry.
We established Koffiana to serve as a curated bridge: a digital sanctuary and physical calibration workshop where the world’s finest manual lever machines, zero-retention burrs, and laboratory water chemistry receive the technical respect they deserve.
The Anti-Pod Manifesto
"We reject the commodification of koffee into disposable aluminum pods and unserviceable plastic appliances."
1. Physical Craft Over Automated Mediocrity: True extraction requires understanding grind particle size distribution, water temperature stability, and hydraulic pressure profiles. Pressing a plastic button on a sealed capsule discards 400 years of culinary craft.
2. Engineering Longevity: Every machine we curate—from the cast stainless steel Cafelat Robot to the commercial rotary mechanics of the Linea Micra—is engineered to be rebuilt, not discarded. Seals can be replaced; burrs can be aligned; boilers can be descaled.
3. The Intentional Catalog: We refuse to stock 5,000 SKUs of plastic accessories. If a tool does not meet our rigorous mechanical tolerances in our Ghent workshop, it does not enter our archive.
