The Benelux Water Lab: Taming Ghent & Amsterdam Hard Water for Espresso
Tap water in Flanders and North Holland contains up to 350 ppm of mineral hardness. Here is how we formulate custom water with Lotus drops to protect equipment and optimize terroir.
The Mineral Realities of Low Countries Tap Water
Tap water across Flanders (Ghent, Antwerp, Bruges) and Western Netherlands (Amsterdam, Rotterdam) contains between 280 and 380 ppm total dissolved solids, dominated by heavy calcium carbonate (CaCO3). While safe to drink, this mineral profile is catastrophic for both espresso machines and specialty coffee flavors.
High calcium levels induce rapid limescale deposition inside dual boilers, temperature sensors, and grouphead solenoid valves within weeks. More insidious is the buffer effect: excessive hydrogen carbonate buffers delicate citric and malic acids, flattening sparkling floral washed Ethiopians into dull, chalky ash.
The SCA vs Studio Calibration Matrix
For balanced espresso and pour-over, the Ghent Lab formulates water using zero-TDS reverse osmosis (RO) remineralized with targeted mineral concentrates:
- General Hardness (GH): 80–110 ppm (favoring Magnesium over Calcium for fruit extraction)
- Carbonate Hardness (KH / Buffer): 40–50 ppm (providing gentle acid balance without neutralizing florals)
- Total TDS Target: 120–150 ppm
"When water is formulated with intention, every origin note sings. You are no longer tasting municipal water treatment; you are tasting volcanic Ethiopian soil."
