Dialing in the Flair 58 & Comandante C40: The 9-Bar Manual Extraction Guide
A visual step-by-step field tutorial: dialing in dense washed Ethiopian coffees at 9 bar with declining lever profile, 12 clicks on the Nitro Blade burrs, and active pre-heating.
Manual Lever Calibration: The Physical Connection
Manual lever espresso represents the absolute summit of tactile brewing craft. Unlike vibration or rotary pumps that push water blindly at fixed motor RPMs, a manual lever machine like the Flair 58 connects your hands directly to the hydraulic piston.
Pairing the Flair 58 with the Comandante C40 MK4 hand grinder delivers a workflow that rivals commercial bench setups costing over €5,000.
Step-by-Step Dial-in Protocol (±0.05g Tolerance)
### Step 1: Burr Calibration & Dose
- Grind: Comandante C40 MK4 set to 12 clicks (or 24 clicks with Red Clix installed).
- Dose: 18.0g of light-medium roast specialty coffee.
- Target particle peak: ~240µm with controlled micro-fines.
### Step 2: Thermal Pre-Heat Management
- Connect the Flair 58 electric preheat controller.
- Set to Level 3 (high heat, 95°C) and allow at least 10 minutes of equilibrium.
- Flush boiling water through the empty portafilter once prior to puck loading.
### Step 3: Gentle Pre-Infusion (2.0 Bar)
- Fill the water chamber with 98°C filtered water.
- Lower the lever arm gently until the gauge reads 2.0 bar.
- Hold for 6 to 8 seconds until the entire underside of the bottomless basket beads with glistening espresso drops.
### Step 4: Ramp to 8.5 Bar and Declining Profile
- Smoothly increase lever force until the pressure gauge reaches 8.5 bar.
- Maintain 8.5 bar until 20g of beverage has yielded in the cup (~18 seconds).
- Gradually ease off pressure down to 5.5 bar for the final 16g of extraction.
- Cut the shot at 36.0g total yield (1:2 ratio, 30–34 seconds total time).
Result: A cup bursting with bergamot, jasmine florals, and dark honey sweetness without a trace of astringency.
